  1. Dorothy Sue Cobble wrote a fantastic book called, Dishing it Out: Waitresses and Their Unions in the Twentieth Century. I had to read it for my doctoral exams and remember being really impressed with it. It discusses the evolution of waitressing and trend for waitresses to see themselves from being unskilled to skilled labor.
